CHOCOLATE PROTEIN GRANOLA

This granola is not like any other. It is packed with plant variety, protein and fibre to start your day right. Meal prep for the week ahead for the ultimate busy girl breakfast.

INGREDIENTS

DRY INGREDIENTS

  • 140g buckwheat groats

  • 60g rolled oats

  • 60g soya protein crispies

  • 30g hemp seeds

  • 30g protein powder (vanilla/chocolate)

  • 20g cacoa powder

  • pinch os sea salt

    WET INGREDIENTS

  • 90g peanut butter (smooth)

  • 3 Medjool dates (about 3 large, pitted)

  • 2 tbsp coconut oil (melted)

  • 2-3 tbsp water (to loosen the date paste if needed)

METHOD

1. Soak the dates into warm water, then drain.
2. Blend the dates, coconut oil, peanut butter and water into a paste.
3. Mix all dry ingredients in a bowl.
4. Add the paste into the dry ingredients until evenly coated.
5. Transfer to a parchment-lined baking sheet and bake at 170C for 18-22 minutes. Stir half way.
6. Allow to cool completely, before storing in an air-tight container.

Serve with high-protein Greek yoghurt & berries.
