GUT HEALTH CHEESECAKE

This isn’t just any cheesecake…this is a gut health cheesecake. Every slice is packed with prebiotic fibre to feed your good bacteria in your gut, and probiotics to get all the beneficial bacteria we all want. Who said nutrition can’t be delicious?

INGREDIENTS

  • CRUMB BASE:

  • 120g whole rolled oats

  • 45g ground almonds

  • 3 tsp ground flaxseeds

  • pinch of salt

  • 3 tsp maple syrup or honey

  • 3 tbsp cashew butter

  • splash of milk if needed to combine


    YOGHURT LAYER:

  • 200g Greek-style yoghurt (high-protein if possible)

  • 1 tsp lemon juice

  • 2 tsp lemon zest

  • 2 tsp maple syrup of honey

  • 1 tsp pure vanilla extract or vanilla pod

    Optional: handful of fresh raspberries


METHOD

  1. Make the crumb base by mixing everything in a large bowl until well combined. Transfer the mix to a small cake tin and press the mixture down using the back of a spoon. Chill in the fridge for 30 min.

  2. Meanwhile, in a large bowl, mix the ingredients for the yoghurt base. Pour over the crumb base, even with a spatula and let it set in the fridge overnight. Top with some lemon zest and optional berries*.
    *Only add them to the middle, because the weight of them can pull the edges of the cheesecake down.
