Makes 4 servings
Prep Time: 10 min
Bake time: 30 min
INGREDIENTS
DRY INGREDIENTS
180g whole rolled oats
50g ground almonds
1 tbsp chia seeds
1 tsp baking powder
Pinch of sea salt
WET INGREDIENTS
2 eggs (or flax eggs)
150g thick Greek yoghurt
150ml milk (your choice)
2 tbsp maple syrup
1 tsp vanilla extract
½ tsp almond extract
TOPPING
30g almond butter
30g flaked almonds
Icing sugar, to dust
200g Greek yoghurt, to serve
METHOD
Preheat the oven to 160°C fan. Add all the wet ingredients including the eggs, Greek yoghurt, milk, maple syrup, vanilla, and almond extract to a medium baking dish and whisk together until smooth.
Add the dry ingredients: oats, ground almonds, chia seeds, baking powder, and salt. Stir everything together until well combined. Leave to sit for 5 minutes to allow the oats and chia to absorb some of the liquid.
Bake for 20 minutes, until set. Remove from the oven, add the almond butter (drizzle over), scatter the almonds, and bake for another 8-10 minutes until golden on top and set around the edges.
Dust with icing sugar once cool. Best served warm with 50g Greek yoghurt per serving.
