EASY STIR FRY RICE

Long day? Make this super easy stir fry that will be ready in no time. Requires no chopping, no fuss, just one pan and 15 minutes. Weekday dinner: solved.

Makes 1 large portion or 2 smaller

INGREDIENTS

  • 1 packet (250g) brown rice

  • 2 tbsp frozen chopped onion

  • ½ cup frozen edamame beans

  • 1 cup frozen mixed veggies

  • protein of choice: I used 10 pre-cooked prawns

  • drizzle of oil for cooking

  • SAUCE

  • 2 tbsp soy sauce

  • ½ tsp rice vinegar

  • ½ tbsp toasted sesame oil

  • pinch of chilli flakes

  • pinch of grated ginger

  • drizzle of honey

METHOD

  1. Prep the sauce in a small bowl by mixing all the ingredients together.

  2. Heat a frying pan to medium-high and drizzle in olive oil. Add the frozen onion. Let it sauté for around 3 minutes until golden brown. Add the frozen veggies and edamame and fry for 5 minutes, stirring frequently. Add the cooked rice, protein of choice* and pour over the sauce. Mix and let them fry for around 3 more minutes, stir frequently.

  3. Finish with spring onion and sesame seeds if you’re feeling fancy!

    *veggie options include: tempeh or tofu
