DOUBLE CHOCOLATE & RASPBERRY COOKIES

PMS cravings are real (read more about it here), and we’ve got you covered with these double chocolate & raspberry cookies — packed with antioxidants, healthy fats, fibre, and, of course, plenty of chocolate! During the luteal phase (the lead-up to “that time of the month”), rising progesterone and dropping oestrogen can impact serotonin and dopamine — your key “happy hormones” that influence mood and appetite. Chocolate helps boost serotonin, lifting your spirits and satisfying cravings — so these are a perfect treat for some much-needed Vitamin J (JOY!).

INGREDIENTS

WET INGREDIENTS

1 ripe banana
1 ripe avocado
1 flax-egg: 2 tbsp ground flaxseeds & 5 tbsp warm water
1 tsp pure vanilla extract
1/3rd cup smooth natural peanut butter
2 tbsp agave/maple syrup
1 cup frozen raspberries

DRY INGREDIENTS

1 cup oat flour
2 tbsp cocoa powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
75g dark chocolate (around 70% - or your fave!)

METHOD

  1. Pre-heat the oven at 180°C (350°F). Line a baking sheet with greaseproof paper.

  2. In a small bowl, mix the ground flaxseeds with warm water. Set aside for a few minutes to thicken (making a flax egg).

  3. Chop the dark chocolate into small chunks.

  4. In a bowl, mix all the dry ingredients, including the chopped chocolate.

  5. In a large bowl, mash the banana and avocado until smooth and runny. Add the flax egg and the rest of the wet ingredients, except the raspberries, and mix well.

  6. Add the dry ingredients to the wet mixture and combine them well. Gently fold in the raspberries.

  7. Chill the batter in the fridge for 15 minutes.

  8. Using an ice scream spoon, portion the batter onto the prepared baking sheet — makes around 8-9 cookies.

  9. Bake for around 18-22 minutes, until the edges are slightly golden.

  10. Let the cookies cool completely before diving in!
