DOUBLE CHOCOLATE RASPBERRY COOKIES

METHOD
1. Pre-heat the oven at 180C (350F). Line a baking sheet with parchment paper.
2. In a small bowl, mix the ground flaxseeds with warm water to make a flax egg. Set aside for a few minutes to thicken.
3. Chop the dark chocolate into small chunks.
4. In a bowl, mix all the dry ingredients, including the chopped chocolate.
5. In large bowl, mash the banana and avocado until smooth and runny. Add the flaxegg and the rest of the wet ingredients, except the raspberries, and mix well.
6. Add the dry ingredients to the wet mixture and combine them well. Gently fold in the raspberries.
7. Chill the batter in the fridge for 15 minutes.
8. Using an ice scream spoon, portion the batter onto the prepared baking sheet-makes around 8-9 cookies.
9. Bake for around 18-22 minutes, until the edges are slightly golden.
10. Let the cookies cool completely before diving in!

WET INGREDIENTS:
1 ripe banana
1 ripe avocado
flaxegg: 2 tbsp ground flaxseeds & 5 tbsp warm water
1 tsp pure vanilla extract
1 3rd cup smooth natural peanut butter
2 tbsp agave/maple syrup
1 cup frozen raspberries
DRY INGREDIENTS
1 cup oat flour
2 tbsp cocoa powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
pinch of salt
75g dark chocolate (around 70% -or your fave chocolate)
