BERRY CHEESECAKE PORRIDGE

It’s porridge season, and this berry cheesecake inspired porridge will not only fill you right up, but it also has all the comfort you need on a cold morning. It’s high-protein, high-fibre and so delicious.

INGREDIENTS

FOR THE OAT MIX

  • ½ cup rolled oats

  • ¾ cup-1 cup milk (depending on the consistency you like)

  • 1 tbsp ground flaxseeds (or chia seeds)

  • 1 scoop  protein powder (vanilla or unflavoured)

  • 100g mixed frozen berries

  • 1/2 tsp pure vanilla extract

  • ½ lemon’s zest

  • Pinch of salt

    THE COTTAGE CHEESE TOPPING/FILLING

  • 175g cottage cheese

  • 1-2 tsp maple syrup

METHOD

  1. Blend the cottage cheese with the maple syrup in a blender, or mash with a fork until creamy. 

  2. Make the porridge in a saucepan by mixing the oats, milk, ground flax, pinch of salt, vanilla extract and frozen berries. Cook on low-medium heat for around 5 minutes until it’s thick and creamy (add more milk depending on your desired consistency).

  3. Take off the heat, mix in the protein powder, lemon’s zest and a heaped tablespoon from the cottage cheese mixture.

  4. Serve in a bowl, top with the rest of the cottage cheese mix, some berries and lemon zest.
