CHOCOLATE BROWNIE BAKED OATS
This is what happens when comfort food and Nutrition Science actually get along. These chocolate brownie baked oats are rich, fudgy and lightly sweet. They are built on slow-release carbs, fibre and protein to keep you full all morning. Oats, flaxseeds and chia seeds feed your gut with fibre whilst cacao brings antioxidants and polyphenols. And the peanut butter swirl? Pure joy (and healthy fats). This will actually make even a busy morning enjoyable.

INGREDIENTS
DRY
2 cups rolled oats
2-3 tbsp cacao powder
2 tbsp ground flaxseeds
1 tsp baking powder
Pinch of salt
Optional: 1 tbsp chia seeds
WET
2 ripe bananas (mashed)
2 eggs or 2 flax eggs (2 tbsp flax + 5 tbsp water)
1 cup milk (your choice)
2-3 tbsp maple syrup or honey
1 tsp vanilla extract
Swirl: Mix 2 tbsp peanut butter with 1 tsp mayple syrup or honey and 1-2 tsp water
SERVE WITH greek yoghurt & frozen berries
METHOD
Mix dry ingredients together in a baking dish and then mix in the wet ingredients. Stir until well combined.
Add spoonfuls of the peanut butter mixture on top. Gently swirl with a knife.
Bake in a pre-heated oven (180°C) for 20 minutes. Cut into 4 slices and store in air-tight container in the fridge.
Serve with greek yoghurt and berries.
