TOFU CREAM CHEESE
Busy? Me too. That’s why I always have this recipe to hand. This high protein & high plants tofu cream cheese is ready in 10 minutes and it’s perfect for meal prep to set you up for success when you have a busy week ahead. Have with a bagel, with crackers as a snack, or straight off the spoon — it’s that delicious.
Makes more than enough
Time: 10 min
INGREDIENTS
300g firm tofu (1 block)
50g cashews (no need to soak)
1/2 lemon juice
2 tbsp nutritional yeast
Handful of fresh dill & parsley
2 tsp mustard
150-200ml soy milk
METHOD
Add everything to a food processor. Blend until smooth — around 2-3 minutes. If too thick, add a little more milk.
Store in the fridge in an air-tight container for up to 3 days.
