BUTTERBEAN & PESTO PASTA

Busy? Same. On days when I barely have time, this is my go-to lunch recipe. It’s super easy and quick to make, plus it’s fibre-rich and high-protein to keep you going even when you don’t have time.

Makes 2 portions


INGREDIENTS

  • 2 portions of high-protein pasta (chickpea/lentil)

  • 1/2 jar butter beans

  • few pieces of sun-dried tomatoes, chopped

  • 2-3 tbsp of your favourite green pesto

  • Handful of rocket salad

  • Salt and pepper to taste

  • Optional drizzle of extra virgin olive oil and pumpkin seed as topping

METHOD

1. Cook the pasta according to package instructions.
2. Once the pasta is drained, mix with the butter beans, chopped sun-dried tomatoes, pesto and rocket salad.
3. Serve with a drizzle of optional extra virgin olive oil and pumpkin seeds.
